Here comes Scoma’s Veggie-mobile!
While Scoma’s Restaurant embraces a traditional San
Francisco style, its philosophy towards the environment is
progressive yet simple: Reduce, Reuse, Recycle. By following
this motto, the restaurant has earned numerous awards for
its commitment to sustaining the environment and protecting
the oceans. Here’s a quick look at programs designed
to minimize the company’s impact on the earth:
-Used vegetable oil is collected and filtered for use
in our company truck. The remainder is donated to the Golden
Gate Bridge to power their maintenance trucks and equipment. -Whenever possible, the restaurant serves only the freshest,
organic products available such as wild salmon and Dungeness
crab (offloaded from the boats directly to the restaurant’s
private Fish Receiving Station), local heirloom tomatoes,
fresh mozzarella and natural beef. -Only biodegradable to-go containers, bags, straws and
paper products with a high percentage of recycled content
are used. - Manual foot switches for the dishwashers to control
water flow and waterless urinals have reduced water consumption
by 35% over previous years -The restaurant is able to divert approximately 95% of
its waste away from landfills each year as a direct result
of its rigorous composting program, which includes: • Diverting food waste, including wax cardboard,
considered “Wet Compostables”

Recycling bottles, cans, and cardboard, dead batteries,
grease, scrap metals, fluorescent light bulbs/tubes, paint,
computers, monitors, and toner Our efforts have captured many accolades including consecutive ‘Golden
Dumpster’ Awards from San Francisco’s Department
of the Environment and multiple Waste Reduction Awards
from the state of California.
